Research
Karsten Fehlhaber, as a veterinarian, deals with the consumer risks coming from food of animal origin. In this field, where the areas of veterinary medicine border on human medicine, he distinguished for contributions to the infection routes of bacteria from food to the human beings, particularly Salmonella, Shigella, Yersinia and Campylobacter. His team discovered a close connection between premortal stress of slaughter animals and microbial contamination of the meat. Further he investigated the mechanisms of Salmonella infections caused by eggs. With his research on the current role of toxoplasmosis infection in pigs he showed that changes of animal farming systems can be followed by new and important problems in consumer protection.
