Klaus Eder performed important research in the field of nutrition physiology. Most of his studies were done at the Institute of Nutritional Sciences of Martin-Luther-Universität Halle-Wittenberg which he led for many years. In 2009, he changed to the Center of Life and Food Sciences Weihenstephan at the Technische Universität München. His research deals mainly with the role of nutrients in lipid metabolism. For instance, he was able to detect important effects of trace elements and dietary lipids and fatty acids on the lipid metabolism in cultured cells, model animals and farm animals. He could moreover clarify the role of carnitine in the nutrition of sows. His actual scientific studies deal with the role of nutrients as activators or inhibitors of various transcription factors as regulators of gene expression.
